Herb-Mustard Roast Potatoes

    5 tbsp. Dijon mustard *
    2 tbsp. olive oil *
    1 clove garlic, chopped
    1 tsp. Herbes de Provence *
    6 med. red-skin potatoes (about 2lbs.) cut into chunks

Mix all ingredients except potatoes in small bowl. Place potatoes in lightly greased baking pan or baking sheet, toss with mustard mixture. Bake at 425F for 35 to 40 minutes or until potatoes are fork tender stirring oc-casionally. Makes 4 servings.
